<p>Eating Disorders: Anorexia Nervosa and Bulimia </p>
<p>The incidences of eating disorders in our society have been steadily increasing over the last few years. It now occurs in 1 out of every 100 women. Nineteen out of 20 people who suffer from eating disorders are young women between 18 and 25. </p>
<p>Studies have found that our social habits and expectations increase the likelihood of the disorder in our young women. The emphasis on outward appearances and thinness are targeted daily through peer pressure and how our society markets its Health and Fitness Products and Services. </p>
<p>Yes obesity is definitely a problem in our society, and we have guidelines for Health and Nutrition, but the majority of young women fail to follow the guidelines in an effort to gain immediate gratification or have had abnormal eating habits throughout their lifetime. </p>
<p>Anorexia Nervosa: </p>
<p>Case Study: </p>
<p>Jennifer is 20 years old. She is very attractive and has always been an over achiever. From an early age she prided herself on her figure. She watched her diet, exercised daily and maintained a regiment of self-discipline. She has always been thin, but has never been satisfied with her weight or appearance. She continually strives to lose more weight. She is 5&#8242; 6&#8243; and weighs 85 lbs. </p>
<p>Jennifer is unaware of the fact that she is undernourished, therefore she sees no problem with her appearance or weight. </p>
<p>How does this happen?? </p>
<p>Learned behavior has a great deal to do with why this happens. Many young women develop anorexia-like patterns as our society is pressured with the pursuit of thinness. Many women are anorexic based on the eating patterns they have developed by trying to accomplish unrealistic weight goals. </p>
<p>Fashion models, long distance runners, women athletes and dancers commonly have anorexia-like traits. </p>
<p>1. An intense fear of becoming obese. Even as they lose more weight. <br />
2. Inaccurate vision of how their bodies appear. Feeling fat when in actuality they are very thin and emaciated. <br />
3. Continual weight loss. 25% or more of their original body weight. <br />
4. Refusal to gain weight, which would place them in a normal body weight range. </p>
<p>Physical Dangers: </p>
<p>A rigorous dieting regime will send the body into starvation mode. Then the physical effects will start to manifest themselves: </p>
<p>Thyroid hormones will become abnormal. Adrenal, growth hormones and blood-pressure hormones also become abnormal. </p>
<p>Heart functions change. The heart pumps less efficiently, muscles become weak and thin. Heart rhythms many change. Blood pressure levels fall. </p>
<p>GI function can become abnormal. Diarrhea occurs as the lining of the digestive tract slow. </p>
<p>High levels of Vitamin A and Carotene in the blood. </p>
<p>Reduced levels of Protein. </p>
<p>An increase in fine body hair, skin dryness and deceased skin temperatures. </p>
<p>Brain activity becomes abnormal. Loss of sleep and feeling of never having enough rest. </p>
<p>Anorexia Nervosa is hard to diagnose, because almost everyone in our society is in pursuing thinness. Denial and deception are common place for young women with Anorexia, therefore it takes a skilled professional to diagnose Anorexia. </p>
<p>Bulimia </p>
<p>Bulimia occurs in women of all ages, but is more common among those under 30. Bulimia is more common than Anorexia and in males. Only a small percentage of people who are Bulimic show signs of Anorexia. </p>
<p>Case Study: </p>
<p>Carry is a women in her late twenties, she maintain a normal weight range and obsesses about food. She starves herself then binges, when she has eaten too much she vomits. </p>
<p>Carry, like 60% of people with Bulimia, starts to binge after a period of extreme dieting. The most popular binge foods are food that are high in sugar and fat, and are easy to eat in large amounts. (cookies, cakes, ice cream, and bread products) </p>
<p>The side effects of the binge eating are swollen hands and feet, bloating, fatigue, headaches, nausea and pain. </p>
<p>Physical Dangers: </p>
<p>Fluid and Electrolyte imbalances. </p>
<p>Abnormal Heart rhythms </p>
<p>Kidney dysfunction which can cause bladder infections and kidney failure. </p>
<p>Irritation to the pharynx, esophagus, and salivary glands. </p>
<p>Erosion of teeth and dental caries. </p>
<p>Use of laxatives can cause injury to the intestinal tract. </p>
<p>Bulimia has been described as a socially approved method of weight control. Practiced among women in the upper-classes because of social obligations which include many dinners and parties. </p>
<p>Both Anorexia and Bulimia are socially generated eating disorders generated by our need for the &#8220;perfect image&#8221;, resulting in self-destructive eating patterns. </p>

My son and his family used to live in Anacortes, Washington.  We generally traveled to visit them by either by taking Interstate 5 north from California or Interstates 82 and 90 west from Idaho.  Along both of these routes, we noticed many scattered Washington vineyards during our trips.  I often wondered how the different wine producing zones in Washington managed to produce great grapes and wine because the climatic regimes on either side of the Cascade Mountain Range are so different.</p>
<p>Washington can be generally divided into two grape growing zones with approximately 34 to 36 thousand acres under cultivation.  One zone is defined as the Interstate 5 corridor on the west side of the Cascade Range.  This zone receives adequate rainfall to grow grapes (average of 48 inches per year).  The other zone is defined as the plains on the east side of the Cascade Range.  Storms in Washington generally arrive from the northwest Pacific Ocean coastal area and move to the east.  As these storms push through the Cascade Range, abundant rainfall occurs on the west side of the mountains.  Later, these same air masses push over the Cascades much drier than when they arrived.  This produces a rain-shadow effect (average of 8 inches per year) because of the topographic lifting of the air mass over the coastal mountains.  Because of the rain shadow effects of the Cascade Range, this area often must use various irrigation techniques to maximize grape production.</p>
<p>The growing season for grapes in Washington is generally from March to September each year.  Harvesting starts in August and can run as late as November.  Washington is the second largest wine-producing state with only California out doing them.  Washington&#8217;s grape annual production is approximately 160 to 170 tons of grapes, which is only a fraction of California&#8217;s production of 3.6 to 3.8 million tons.  Prohibition arrived in 1920, banning alcohol-based beverages, and, as in other states, set the wine producing industry back.  The industry is building rapidly based on the availability of reasonably affordable land, but because most of the vineyards are small operations, the per bottle production costs are higher than most other areas in the country.  Washington wines are generally more expensive than wines produced elsewhere.  It remains to be seen if this will be restrictive and problematic as the industry grows.  Meanwhile, one article I reviewed stated a new winery opens about every other week with the current total around 650 wineries.</p>
<p>The quality of Washington wines cannot be disputed.  The wines from this region have won numerous awards and are currently marketed in every U.S. state and 40 other countries.  Some of the leading red grapes found are Cabernet Sauvignon, Merlot, Syrah, Cabernet France, Malbec, Sangiovese, Pinot Noir and Lemberger.  Some of the leading white varietals are Chardonnay, Riesling, Pinot Gris, Sauvignon Blanc, Gewurztraminer, Viognier, Semillon and Chenin Blanc.  White wine production is 54 percent of the total, while red wine is 46 percent of the total.  The total economic impact to Washington State from the wine industry is estimated to be in the neighborhood of 3 billion dollars a year.</p>
<p>Touring wineries and vineyards is an excellent way to pass the time.  Cities in the Interstate 5 corridor that could serve as a tour base are Vancouver, Longview, Olympia, Tacoma, Seattle, Everett, Mt. Vernon, Bellingham and Fern Dale.  Wine production in the more arid eastern side of the Cascade Range is more scattered across the area.  Cities that could serve as a tour base are Spokane, Brewster, Chelan, Wenatchee, Yakima, Moses Lake, Toppenish, Richland and Walla Walla.  One thing I did notice, when visiting the few vineyards that I have, is that during your visits often you will get a great view of a snow-covered peak.</p>
<p>When visiting Washington, touring its wine country will be very rewarding.  Some great wines are produced; the small wine growing operations are friendly to visit; and a landscape of beautiful views will reward you.  Remember, buy the wine you like, store it properly, serve it at the proper temperature and enjoy it immensely. </p>

<p>Ingredients: </p>
<p>1/2 cup of extra virgin olive oil </p>
<p>4 ounces unsalted butter </p>
<p>1 large sweet onion, cut into 1/4-inch dice </p>
<p>2 red bell peppers, deseeded and cut into 1/4-inch dice </p>
<p>1 vine ripe tomato, diced </p>
<p>5 cloves of garlic, minced </p>
<p>A sprig of rosemary </p>
<p>Sea salt and freshly ground pepper </p>
<p>1/2 cup dry white wine </p>
<p>1 small jar of Spanish olives (green olives stuffed with pimientos), drained </p>
<p>2 6-ounce cans of Bumble Bee Prime Fillet Solid White Albacore, drained </p>
<p>1/2 pound rigatoni pasta </p>
<p>1 tablespoon thinly sliced chives </p>
<p>Dry aged parmesan, grated </p>
<p>Pinch of crushed red hot pepper flakes (optional) </p>
<p>Directions: Bring water to boil in a large pot according to package directions in preparation for cooking the rigatoni pasta. Heat 2/3 of the olive oil and 4 ounces of unsalted butter in a large sauté pan over medium-high heat until nearly hot but not smoking. Add diced onions and cook for approximately 5 minutes until soft. Add diced red bell peppers, reducing to low-medium heat and cook until peppers are soft. Add diced tomato, minced garlic and 1/3 teaspoon of rosemary sprig leaves. Season with sea salt and freshly ground pepper. </p>
<p>Cover and cook over low heat for another 10 minutes. Add 1/2 cup of dry white wine and simmer for 5 minutes. Then, add drained whole olives and Bumble Bee Prime Fillet tuna in solid pieces to sautéed mixture. Cover and cook until tuna is heated through (approximately 3 to 5 minutes). </p>
<p>Cook the rigatoni pasta in a large pot of boiling salted water according to the package directions or until al dente. Drain the pasta in a colander, leaving behind a little moisture. Toss the pasta, tuna sauce and water, then place in a serving dish or on individual plates. Drizzle remaining olive oil over the top and garnish with thinly sliced chives and grated dry aged parmesan. Top with a pinch of crushed red hot pepper flakes, if you prefer a little more bite. </p>
<p>* Delicate, Festive Albacore Tuna Canape</p>
<p>Recipe by Chef de Cuisine Fabrice Poigin, Bertrand at Mister A&#8217;s, San Diego </p>
<p>An easy-to-follow, elegant-style canapé for entertaining guests or just treating yourself to a unique way of serving up albacore tuna! Serves 6 to 8. </p>
<p>Ingredients: </p>
<p>1 6-ounce can of Bumble Bee Prime Fillet Solid White Albacore, drained </p>
<p>2 finely diced shallots </p>
<p>1 tablespoon chives, thinly sliced </p>
<p>1 soup spoon crème fraiche </p>
<p>Sea salt and freshly ground pepper to taste </p>
<p>Sourdough bread (optional) </p>
<p>3 ounces of comté cheese or aged white cheddar, sliced thinly </p>
<p>Extra crème fraiche for garnish (optional) </p>
<p>1/2 ounce domestic caviar (optional) </p>
<p>Chervil sprigs (optional) </p>
<p>Directions: Mix together Prime Fillet tuna, shallots, chives, crème fraiche, and salt and pepper. Spoon mixture onto toasted triangles of sourdough bread or into Chinese ceramic serving spoons. Top each serving mixture with a slice of cheese and place in a pre-heated oven (300 degrees) until cheese begins to melt &#8212; approximately 3 minutes. Remove toasties or Chinese spoons from the oven and top individually with a dot of crème fraiche, and then a dot of caviar (optional). Finish with a sprig of chervil to garnish. </p>
<p>* Prime Fillet Albacore Tuna and Potato Casserole </p>
<p>Recipe by Chef Gerald Hirigoyen, owner and executive chef, Piperade and Fringale Restaurants, San Francisco </p>
<p>Recognized in Food &amp; Wine magazine&#8217;s 2003 Top Ten Best New Wine Lists, Chef Gerald suggests complementing this entrée with a glass of 2001 Turnbull Napa Valley Sauvignon Blanc. Serves 4. </p>
<p>Ingredients: </p>
<p>1/2 cup olive oil </p>
<p>2 large onions, thinly sliced </p>
<p>4 medium Anaheim chilies, seeded and thinly sliced </p>
<p>2 bay leaves </p>
<p>8 garlic cloves, peeled and thinly sliced </p>
<p>2 pounds Yukon Gold potatoes, quartered </p>
<p>1 cup dry white wine </p>
<p>3 cups vegetable stock or canned vegetable broth </p>
<p>6 to 8 saffron threads </p>
<p>1 tablespoon kosher salt </p>
<p>1/2 teaspoon ground white pepper </p>
<p>1 mild dried chili pepper </p>
<p>4 6-ounce cans of Bumble Bee Prime Fillet Solid White Albacore, drained </p>
<p>3 tablespoons chopped fresh parsley </p>
<p>Pinch of piment d&#8217;Espelette (Basque chili pepper) or mild cayenne powder </p>
<p>Directions: Warm 1/2 cup olive oil in a large casserole over high heat. Add onions, Anaheim chilies, bay leaves, and garlic and sauté for 10 minutes. Add the potatoes, wine, vegetable stock, and saffron. Bring to a boil, cover, and reduce heat to medium. Add salt, pepper, and dried chili pepper, and cook until the potatoes are tender, about 15 minutes. Add the tuna and sauté for 2 to 3 minutes, or until warmed through. Stir only occasionally to avoid breaking apart the fish. Season with salt and pepper to taste. Discard the bay leaves before serving. Serve in shallow soup bowls, and sprinkle with the parsley and piment d&#8217;Espelette. </p>

In this series of articles I&#8217;m going to give you a crash course in the rich and varied beers that dot the globe. In case you haven&#8217;t noticed, microbrew beers are taking off big time. Beer used to be the &#8220;ugly cousin&#8221; of the alcohol world. Pretty well everyone drank their fair share, but only a handful of die hard beer drinkers ever really paid it too much respect. Finally beer is starting to be appreciated for its rich history and diversity, and the care and time that goes into crafting a quality brew.</p>
<p>In this series I will usually give a quick run down of the history, characteristics and popular brands you are likely to find in stores. I might even throw in the odd homebrew recipe, so keep an eye out!</p>
<p>The first beer I&#8217;d like to introduce to you is a peculiar style known as &#8220;Lambic&#8221;</p>
<p>Although no one is exactly sure how or precisely when this style of beer came about, the town of Lembeek (likely where the name came from) has been active in brewing since at least the 1400s. It&#8217;s in this region of Belgium we can derive most of the history and production of this particularly unique form variety of beer.</p>
<p>One of the things that make this type of beer so unique is the way in which it&#8217;s produced. The earliest forms of any style of beer were typically made from airborne yeast particles, since at the time no one really knew what caused beer to ferment. Instead, they observed that if they left their brew out in the open air for a time some magical force caused it to begin the desired process. However, since then, science has identified this substance that floats in the wind as yeast; brewers have used this knowledge to more purposefully start each new batch with the use of a yeast culture. Lambics on the other hand have never converted to the newer, more controlled method of brewing. Since brewers of Lambic allow wild yeast strains to inhabit their brew it causes the distinctive winy, tart flavor and earthy aroma. There is huge variation between Lambics produced at different dates, and even between different bottles.</p>
<p>Another characteristic of Lambics is that they are made traditionally with large amounts of aged hops. The reason for this is said to be that the old Belgian brewers understood that hops were a good preservative, but on the other hand didn&#8217;t want to influence the flavor of their beer too dramatically as would usually result from adding an abundance of hops. This is where the ageing process comes in. Aged hops are much less effective at imparting their natural flavor to beer, but they still have the ability to pass on their preservative qualities.</p>
<p>A common practice utilized by Lambic brewers is to blend their finished product with other beer varieties to produce fruit beers. By far the most popular styles of blended Lambic are &#8220;cherry kriek&#8221; and &#8220;raspberry frambozen&#8221;. Blended Lambic is actually where the bulk of the Lambic made by the larger producers is going. It&#8217;s still possible to purchase traditional unblended Lambic in Belgium, and to my knowledge there are some North American store bought varieties being produced. There&#8217;s no two ways about it though, the single best way to get your hands on quality Lambic is to home brew it yourself!</p>
